Banana Chocolate chip muffin
Talk about healthy and flavorful muffin. This muffin does not have any sugar, oil, butter or dairy. It is also gluten free.
I use almond flour to make the muffin.
I buy the 3 lb bag Almond flour from Costco. It is about $12.99 good quality Almond flour.
I make this muffin in my house at least twice a week. My kids love it for breakfast and also snack after school.
So good for the afternoon snack with a cup of tea or coffee. It just satisfies my sweet tooth.
I use few and simple ingredients to make this muffin and it is all made in on blender.
Here are the ingredients.
3 bananas
3 eggs (I use Pasture raised I eggs) I buy mine from Costco/Sams
3 cups Almond flour https://www.costcobusinessdelivery.com
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
2 tsp vanilla extract
1/2 semi sweet mini chocolate chips
Direction
Add bananas, eggs, baking powder, baking soda, cinnamon, and vanilla in a blender.
Blend until all blended together and has a liquid consistency.
Add the almond flour and pulse and then blend scrape the side to mix well
Add the chocolate chip and mix well
preheat the oven at 350 degrees
spray the muffin tin
divide the batter equally as possible in the muffin tin. (12 cups)
Bake for about 25 min.
