Delicious, Healthy, Tuna, Garbanzo and Kale salad
This salad is very nutritious, light, veggie and protein packed meal. It is also easy to make; good for lunch or dinner. It is also delicious the next day if there is any leftover.
I also made delicious salad dressing to go with this salad. Just a simple apple cider vinegar and extra virgin olive oil dressing.
These are the ingredients I used:
2 cups of chopped Kale
1 can Tuna ( I used chicken in the sea brand)
1 cup garbanzo beans.
1/4 cup chopped red onion
1/4 cup chopped walnut or any nuts available
1/2 jalapeno chopped
1/3 cup feta cheese (optional)
1 tbs extra virgin olive oil
Make it
In a bowl add the kale and drizzle the olive oil. Massage the kale with olive oil. This gives the kale a softer texture and gentler flavor.
Add the ingredients the above ingredients.
These are the ingredients I used for the dressing
2 tbs apple cider vinegar
3 tbs extra virgin olive oil
1/2 lemon juice
salt and pepper
1/2 tsp garlic powder
1 tbs honey
mix well. Drizzle on the salad and toss the salad.
