Delicious Roasted Veggies

Anyone loves Roasted veggies that are healthy, flavor and easy to make? Roasting can take vegetables to another level. Even the ones that do not like veggies eat them. I mean the picky eaters. I have one in my house, my daughter. However when it comes to these roasted veggies she just eat them without any hesitation.


I love roasting sweet potatoes, Cauliflowers, Brussel Sprouts and more. Just let these veggies caramelized in the oven with some olive oil and some seasoning. Easy to make and easy clean up. Isn't that what we all want. Let the oven do all the work.


Here is a recipe:

Diced sweet potatoes (2 medium)

1 small cauliflower

1/2 lb Brussel sprouts

diced bell pepper

diced onion

mushrooms

paprika cumin

garlic powder

salt pepper

olive oil



Preheat oven 400 degrees In large bowl add sweet potatoes, add 1/2 tsp paprika, 1/2 tsp cumin, 1/2 tsp garlic powder, salt and pepper drizzle 2 tbs olive oil mix well. Roast for 20 min Repeat the same process for the cauliflowers roast for 20 min and Brussel Sprouts Roast for 25 min or until tender. Saute bell pepper with onion season with salt and pepper. Saute mushroom with onion season with salt and pepper. Do not season until the mushrooms are cooked through. Seasoning it early will make the mushroom soggy. Top the veggies on brown rice or any other grain and enjoy.
