Ground beef cauliflower rice stuffed Bell Peppers
Colorful bell peppers stuffed with lean ground beef and cauliflower rice could be the easiest, healthiest, and delicious weeknight dinner.
This is one of the easiest and the quickest dinner any one can make. It is colorful, packed with veggies and flavor. I used lean ground beef, cauliflower rice and my favorite spices for this dish. You can use your favorite seasoning or what you have on hand at home. This is a very forgiving recipe.

Lets see what we need to make our stuffed pepper.
1 lb ground beef
2 cups cauliflower rice
1 cup shredded cheese. ( I used Mexican blend)
1 medium onion chopped
2 cloves of garlic chopped
2 bell peppers
2 tbs apple cider vinegar (optional
3 tbs oil
4 oz tomato sauce
salt and pepper
1 tbs cumin
1 tbs paprika
1 tbs garlic rosemary spice
1 tbs berbere (Ethiopian spice) optional
Preheat oven at 400 degrees
Cut the bell pepper into two. Meanwhile boil some water and put the bell peppers in the water for 2-3 minutes. This process helps the bell pepper to cook faster when it is filled with the cooked beef mixture.
On medium skillet add 2 tbs olive oil. Add the beef to the skillet. Cook the beef until it is brown
Remove the beef from the skillet once it is cooked well. Add a little oil and add the onion. Cook the onion for about 2 minutes and add the garlic. Cook the garlic with the onion. Then add the spices. Mix the spices with onion and garlic. Add a little bit of water if needed.
Once everything is mixed well add the cooked beef back and mix well.
Add the tomato sauce and mix then add the cauliflower rice. I used frozen cauliflower rice. Once the cauliflower rice is mixed well add the apple cider vinegar.
Once everything is cooked well remove from stove.
Add the mixture to the peppers and top them with cheese. Put in the oven for 20 minutes.
Serve with your favorite side dish. I served it with spinach salad.
