Healthy Creamy Chicken Zoodle
This is a very simple, easy and delicious meal. If you make this dish you will hardly miss the regular pasta. Well don't get me wrong; pasta is one of my favorite foods; but the zoodle has all the flavors you would want in your typical pasta dish.
I made this dish after the Easter holiday, after eating lots of carbs. This is a low carb friendly dish, specially since the pasta is replaced by zoodle and also packed with lots of low carb veggies. I also added some grilled chicken breast to it; just delicious.
I made the zoodle at home but you can also find them at most grocery stores. To make it at home you will need a veggie spiralizer. You can get the spiralizer on Amazon. I will put the link at the bottom.
Here is what I used to make this dish.
2 medium thinly sliced chicken breast
5 medium zucchini or squash (I mixed both)
1 cup sliced mushroom
1 cup broccoli (I used frozen)
1 cup grape tomatoes
2-3 tbs cream cheese
1 cup marinara sauce. I used Raos sauce
3 tbs olive oil
2 tbs avocado oil
3 cloves of chopped garlic
1/2 cup chopped onion
2 tbs Italian seasoning
1 tbs lemon zest
1/2 lemon juice
2 tsp pepper flakes
Grated Parmesan cheese for garnish
chopped parsley for garnish (optional)
Make it
Season the chicken well with the seasonings listed above. Heat a grill pan or any pan you have. Add 2 tbs oil (Avocado oil) add the chicken and grill for 3 - 4 minute on each side.
In medium pan add olive oil and add chopped onion. Add garlic and cook. After the onion and the garlic are cooked for about 2 min add the sliced mushroom. Saute well.
Add grape tomatoes and mix well. Add seasoning, salt and pepper at this point.
cook for about 2 minutes and then add marinara sauce and about 1/2 a cup water. Let it simmer. At this point add the cream cheese. Stir until the cream cheese melts and mix well with the marinara sauce. Add broccoli and mix well.
Add crushed pepper, and more seasoning if needed. Add the zoodle at this point and mix well. Cook for about 3-5 minutes.
Serve in bowl, garnish with grated cheese, parsley and drizzle with extra virgin olive oil.
