Oatmeal Carrot Cranberry bake




What is better than a healthy but delicious breakfast or snack. So good to have with coffee or tea. Your choice. The oatmeal carrot bake is so fresh and makes your house smell so good. I do not mind eating this everyday for breakfast. So tasty.

There is no dairy or oil in this bake. So you would not feel bad eating it. Let's go ahead talk about what we need to make it.


Ingredients

Preheat oven at 350 degrees

2 cups rolled oats

2 cup hot water

1/2 cup mashed banana or apple sauce or pumpkin puree

1 flax egg (mix one table spoon flax mill with two table spoon of water)

1/4 cup honey or maple syrup

1/3 cup coconut flour

1 cup shredded carrots

1/2 cup cranberries

1/2 cup sliced almonds or any kind of nuts on hand

2 tea spoon cinnamon

1 tea spoon vanilla extract optional


Make it

Add the oats in a bowl add the hot water to the bowl and mix it with the oats. Let it stand for 10 min



after 10 min add each ingredients and mix well



Grease a 9 by 13 oven safe dish and pour the mixture into it.



Bake for 50 to 60 min

Let cool and cut into squares.



You can enjoy this topped with peanut butter or almond butter or drizzle with honey or just by itself.
