Spinach Tomato Mozzarella Frittatas

I love eating eggs for breakfast even sometimes for dinner. In my house hold we make frittatas in many different ways. These frittats are perfect for grab and go because they are made in a muffin tin. Also they can keep in the fridge up to a week and can freeze them for about 3 month.

These frittatas are simple, flavorful, healthy and easy to make.

They can be made with all veggies, all meat, or mixture of both. Whatever you have in refrigerator. For this recipe I used; spinach, tomatoes, onion, sliced Jalapenos and mozzarella cheese.

10 Pasture raised eggs

2 cups spinach half

a cup grape tomatoes half

a cup onion

1 tbs oil

Sliced jalapenos (optional)

salt and pepper

1 cup shredded cheese

Preheat oven at 350 spray muffin tin beat eggs, saute the veggies, add the cooked veggies in the egg. spoon the eggs in the muffin tin. Cook eggs in the oven for 22 min Serve with fruit, veggie or avocado.
